Allen Releases Easy Gluten-free Lunches and Snacks: Simple Cookbook

PR Log - Oct 27, 2012 - Tracey Allen has just launched her fourth book in paperback and Kindle format.  The book titled Easy Gluten-free Lunches and Snacks: Simple Cookbook is a cookbook designed to make gluten-free cooking simple and includes such favourites as  wraps, pita bread, crackers, tacos, donairs, and more.      

Why eat gluten-free? A large number of people have celiac disease or gluten intolerance and this prevents them from eating foods that contains gluten. Such foods are: wheat, barley, rye, oats, spelt, and other grains.  Keeping a gluten-free diet can be a challenge as gluten in various forms is found in a large number of products, especially processed where there are ingredients that contain gluten but are not readily identifiable.

When asked why she wrote the book Allen replied, “I believe in keeping it simple and believe it is healthier to cook from scratch, as well as, financially more sustainable.  To share the simple tricks I've learned I hope to prevent others from going years and years without decent bread products among other things.  I say this since when I first started looking at gluten-free books I found them complicated with a number of flour mixes, different ingredients, etc.  Since I love to cook and don't shy away from substituting and experimenting I found these complicated cook books frustrating; I mean how do you substitute something when you don't even know what it is.”  

Allen has developed a one flour mix for all things -  the mix contains no corn, bean or soy.  Included in the book are recipes  for bread, hamburger buns, wraps, pita, tacos and crackers that are cheaper than buying them helping celiac and gluten intolerant people with their food budgets.  The recipes are easy to make and use the fewest ingredients.
