  • 12 corn tortillas
  • 1 cup vegetable oil
  • 1 (15 oz) can of red enchilada sauce
  • 1 packet of taco seasoning
  • Toppings: eggs, creme fraiche, queso fresco, diced avocado, green onion, and cilantro

Directions

  1. Cut tortillas into bite-sized wedges.
  2. Place vegetable oil in a GoodCook saucepan and heat on the stovetop over medium heat. Once the oil is hot, fry small batches of tortillas until they are light brown and crispy, and all have been fried. Transfer to a plate and set aside.
  3. In a GoodCook ProEase skillet or frypan, heat the enchilada sauce and taco you are seasoning together over medium. Add fried tortillas, stirring to coat. Allow cooking until slightly softened.
